Nicaragua Finca Santa Maura Pacamara
Our current “Big Bean” offering is a lovely Central American pacamara variety, on a medium-mild roast so can be appreciated perfectly in filter methods or as a fruity espresso.
Fully washed and dried on patios, high up in the mountainous Jinotega region. This combination of terroir and processing on this unique variety produces something different from the commodity-grade Nicaraguans on the market. The farm itself is the picture of social and environmental sustainability.
In the cup, a confectionary note leads to great acidity surrounded by sweetness.
